History of Use 

One of the first mentions of Shiitake as a culinary and medicinal mushroom is within Traditional Chinese Medicine (TCM). According to a Chinese legend, a deity known as Shennong bestowed the world with natural treasures, including medicinal mushrooms, over 5000 years ago. This legend became the groundwork for Chinese medicine’s use of superfoods and acupuncture. Today, Shiitake is grown in several parts of the world and has become a staple within many cuisines. In TCM, this mushroom is traditionally used to increase energy, cure colds, and eliminate worms.
